Who'd have thought grating an apple and 1 1/4 carrots would take 2 hours?!! It puzzles me because I really don't recall working that slow. I started on it at 1am (never again in the near future!), so that means an ungodly 3am on Sunday morning by the time I was done with all that grating!

See the cracks on the cake? That's because after I added the grated stuff in and combined it really well, I realised that the batter was a little too liquid (I suspect it's because I didn't drain the juice from the grated stuff?). So I added more flour to get the consistency that I thought was more correct. And since too much liquid equals more flour equals more batter, I was very generous with the baking powder. Overly generous, I realised. Because, rise it did, to a very repectable height, which I'm very proud of. But 45 minutes into baking, one by one - piak piak piak - the cracks started appearing. Like duh - 2 hours of grating in the wee hours of the day makes you dumb.

Good thing there was the frosting. The yummy cheese frosting covered all of it up really nicely (No one knew about it!), and frankly, was the best part of the cake. While the cake was good, it didn't make me go, "Wow! We can make this again next time!".

Next time, I'll try the more tropical one. In the day.
